Sparkling Blood Orange Mocktail

When I’m deep in a training cycle for a distance race, I tend to cut back on drinking alcoholic beverages. Don’t get me wrong, I still enjoy a hazy IPA or a nice glass of red wine every once in a while (balance, right?!), but I generally feel better removing alcohol and added sugar from my diet as much as possible. Still sometimes I want to feel fancy and have a fun drink in the evening. Enter the Sparkling Blood Orange Mocktail. This 2 ingredient recipe can be stirred up in about 30 seconds. I find it tastes best out of your fanciest wine glass. I hope you enjoy!

Ingredients

Serves 2

  • 1 can of lemon Spindrift (or sub sparkling water and 2 tbs fresh lemon juice)
  • 1 blood orange (half for the juice, half for garnish)

Directions

  1. Pour 1/2 can of lemon spindrift into your fanciest wine glass. If you don’t have spindrift or want an easy alternative, just use regular sparkling water with 1 tbs fresh lemon juice!
  2. Squeeze juice from 1/4 of a blood orange into your beverage & stir to combine.
  3. Slice another 1/4 of the blood orange and add the slices as garnish.
  4. Enjoy!

Iced Cacao Latte

I love a hot beverage as much as the next girl, but sometimes even in the winter I crave something iced, creamy, and chocolatey. Enter the Iced Cacao Latte. You can make this one with or without coffee. I usually crave it when I’m hitting that afternoon slump, so I often opt out of the cold brew addition. It basically tastes like elevated chocolate milk and I love it! You can also add in some cold brew if you’re looking for that chocolate coffee flavor.

Ingredients

  • 1 c coconut milk
  • 2 tbs cacao powder
  • Optional: 1/4 – 1/2 c cold brew
  • Optional: drizzle of pure maple syrup or agave nectar for a little sweetness

Directions

  1. Add all ingredients to a blender for 1 min.
  2. Pour into your favorite glass over ice and enjoy!

This will take less than 3 minutes to make and gives you a boost when you’re looking for it. Cacao is high in magnesium, so this drink has so many amazing benefits such as supporting heart health & blood sugar balance, anti-inflammatory benefits, boosts brain function – the list goes on! Cacao Matcha Latte

Looking for a morning coffee swap, a refreshing drink on a hot day, a creamy sweet pick-me-up? This latte is for you! Matcha and cacao both have incredible health benefits – alertness and focus without the crash, improved sleep, tons of antioxidants- the list goes on. Blend this up today. It’s bound to be your new favorite drink!

Ingredients

  • 1 c unsweetened coconut milk (the kind from the carton, not the can)
  • 1 tbs cacao powder
  • 1 tsp matcha powder (I love Matchaful!)
  • ½ tsp agave nectar for sweetness 

Directions

  1. Blend all ingredients in the blender.
  2. Pour over a tall glass of ice.
  3. Enjoy!

Homemade Almond Milk

I love a good almond milk. Mostly, I’m thankful for the alternative to cow’s milk, as it makes my tummy much happier. Luckily, there are tons of great almond milk options in the grocery stores these days, but many of them still have stabilizers and preservatives. On busy weeks, those store-bought almond milks work great for me, but when I have a few extra minutes, I love to make my own at home! It’s extra creamy and delicious, and I love knowing exactly what I’m putting into my body. 

Ingredients

  • 1 c raw almonds
  • 4 c cold, filtered water
  • Optional: 1 tsp vanilla extract

Directions

  1. Soak the almonds in water for 6 – 8 hours.
  2. After soaking, drain and rinse the almonds.
  3. Blend the almonds and water on high in a high-speed blender for 4 – 5 minutes (+ optional vanilla extract if you want vanilla almond milk).
  4. Place a straining bag in a large bowl. Pour the blended almond milk into the strainer, removing the almond pulp from the liquid. 
  5. Store the pulp-free almond milk in an air-tight container in the fridge (I use mason jars!) for up to 5 days. 
  6. Pro tip: make sure you shake your almond milk well before use, as separation is natural.
  7. Pro tip #2: DON’T THROW OUT YOUR ALMOND PULP!!! It can easily be used to make homemade almond flour! Check out my Homemade Almond Flour recipe to learn how!

Matcha Latte

Match green tea has been used in Asian cultures for hundreds of years for its tremendous benefits, including its rich antioxidants and ability to help improve focus. Lucky for us, it’s now a health fad in America and I have fully jumped on the bandwagon. Try this Matcha Latte recipe when you need a pick-me-up without the afternoon coffee crash! Ingredients

  • 1 c unsweetened almond milk
  • 1 tsp ceremonial grade matcha tea powder. I like this brand and order it from Amazon!
  • Optional: ½ tsp of agave for a natural sweetener 
  • Lots of ice

Directions

  1. Blend the almond milk, matcha, and optional agave until well combined. 
  2. Pour over a large glass of ice and enjoy!

Heathier Pumpkin Spice Latte

Happy Fall!!!!!! It’s that time of year again, when everything you touch turns to pumpkin. Kind of like a reverse Cinderella story.. Anyways.. I adore all things pumpkin and I don’t care what anyone thinks about it! Lately I’ve been loving this healthier version of the classic pumpkin spice latte. Enjoy it hot or iced! I can’t wait to hear what you think!

Ingredients

  • 1 c oat milk or cashew walnut milk
  • ½ c of your favorite brewed coffee. I love using local brands!
  • 2 tbs pumpkin puree. Just straight up canned pumpkin. Find something without additives! 
  • 1-2 tsp maple syrup, to taste
  • ¼ tsp cinnamon
  • ¼ tsp pumpkin pie spice

Directions

  1. Brew your favorite coffee.
  2. While your coffee is brewing, add the rest of the ingredients into your blender and blend until well combined. 
  3. Once blended, transfer the mixture into a saucepan and heat over low to medium heat, careful not to allow the milk mixture to boil. 
  4. Finally, combine the coffee and warm milk mixture in your favorite coffee mug and enjoy!
  5. If you prefer your coffee iced, skip step 3. Instead, pour your milk mixture and coffee over a large cup of ice! Perfect for when you’re in the mood for Fall but the temperatures outside aren’t cooperating.

Healthy Peppermint Hot Chocolate

The week between Christmas and New Years is the land of no rules. Want to stay in your PJs all day? Do it! Feel like curling up on the couch under a cozy blanket and reading or binging Netflix? Go for it! Want to have a constant mug of hot chocolate? I’m here for it! Lucky for you, I concocted a healthy version of your favorite cold weather beverage for guilt free sipping. Feel free to play with the quantities to achieve your desired flavor. 

Ingredients

  • 1.5 c oat milk (I like Califia Farms)
  • 2 tbs cacao powder
  • 1-2 tsp agave
  • ½ tsp peppermint extract (option to exclude this for traditional hot chocolate!)

Directions

  1. Add all ingredients to the blender and blend. Pour into a mug and microwave or pour into a saucepan and heat over medium heat.
  2. Once you reach your desired temperature, pour into a mug and enjoy.
  3. Bonus- if you want to elevate your hot beverage, pour it into a frothing cup after heating and froth the oat milk before enjoying!

Homemade Cashew Milk

I use nut milk every single day. Whether it’s in my smoothie, coffee, matcha latte, or cooking it’s a staple item in my fridge. This is a super easy recipe to blend up if you have a high-power blender. I prefer this to store bought nut milk, as it’s extra creamy and doesn’t contain any additives. Ingredients

  • 2c raw cashews
  • 4c water

Directions

  1. Soak the cashews in water for 5 – 8 hours.
  2. Drain and rinse the cashews.
  3. In a high-power blender, combine the cashews and water. Blend for 5 minutes. 
  4. Optional: add the following for additional flavor:
    1. 1/2tbs vanilla extract 
    2. 1-2tbs of a natural sweetener, such as honey, agave, or pure maple syrup
    3. Sprinkle of cinnamon 
    4. Add more water if you prefer a thinner consistency 
  5. Store in an airtight container in the refrigerator. Use within one week.

Pack in the Greens Juice

This is a superrrr simple green juice recipe if you have a juicer. There are tons of similar green juice recipes, so don’t think for one minute I’m the only health coach to dream this up. I thought it was important to include on my website, even if it’s similar to other healthy green juice recipes out there, because I want to make sure my community has access to this healthy drink! Enjoy!

Makes about 20 oz, depending on the size of your fruits & veggies. 

Ingredients

  • 1 stalk of celery (not to be confused with 1 rib, which are the individual pieces that make up the stalk.)
  • 1 cucumber
  • 1 lemon
  • Optional: ½ – 1 green apple to taste OR ½ – 1 green pear to taste OR 1 kiwi
  • Optional: ½ – 1 in chunk of ginger root 

Directions

  1. Clean all of your produce. 
  2. Chop the knobby end (a technical term) off the celery stock.
  3. Cut the ends off the cucumber and peel the outside so it looks like it has stripes. This is important for the longevity of your juicer blades. 
  4. Cut the lemon into quarters or eights and remove the peel. Again, avoid juicing the peel for the longevity of your juicer. 
  5. If you’re including apple, pear, kiwi, or ginger root, clean and chop what you’re including. Avoid juicing the apple or pear core (juice it in quarters at the largest). If you juice ginger root frequently, it’s easier on your blender if you use a peeler to remove the rough peel. 
  6. Add into your juicer in the following order: cucumber, lemon, optional additions, celery. Pro Tip: add the smallest items (ex. Lemon, herbs, ginger) in the middle of the other items to help move them through the juicer. When using celery, always juice it last, as the fibers tend to clog up the blades and strainer.
  7. Best served after refrigerated or over ice!
