Almond Butter Blueberry Toast

If you’re looking for a super quick, filling snack, I’ve got ya covered. You probably have most of these ingredients on hand. The whole grains in the bread are a healthy carb source, the almond butter is full of natural fats and protein, keeping you satisfied. The blueberries are packed with antioxidants and pack a great burst of flavor and freshness, and the drizzle of natural honey is a little sweetness without all the processed sugar. I love this snack when I’m in a marathon training block and tend to be extra hungry!

Ingredients

  • whole grain bread (I like @daveskillerbread)
  • almond butter (look for a clean ingredient list)
  • blueberries
  • natural honey

Directions

  1. Toast the bread
  2. Lather it up with almond butter
  3. Top with blueberries
  4. Drizzle with honey
  5. Enjoy!!

Brunch Avocado Toast

Brunch is hands-down my favorite meal. On weekday mornings when you’re running out the door, this Brunch Avocado Toast recipe will help spice up your day and bring in those weekend vibes!

Ingredients

  • 2 slices of bread. I love using sourdough for this particular recipe! 
  • 1 avocado, mashed
  • 2 eggs cooked to your preference (my favorite for this recipe is poached, but I also enjoy them scrambled, fried, or hard boiled)
  • Everything but the bagel seasoning to taste
  • Optional: goat cheese

Directions (if poaching an egg)

  1. Bring water with a splash of vinegar to a boil. Once boiling, reduce the water to a simmer.
  2. Using a spoon, swirl the water as you lower a cracked egg into the water using a metal latel or ceramic or glass ramekin.
  3. Cook the egg for 2 – 4 minutes. 
  4. Repeat for as many eggs as you want, or cook your egg to preference.  
  5. Next, toast 2 slices of your favorite bread.
  6. While your bread is toasting, mash 1 ripe avocado in a bowl. 
  7. Remove toast from the toaster and spread the mashed avocado over both slices. 
  8. Place your poached egg on top of your avocado toast.
  9. Top with everything but the bagel seasoning and optional goat cheese.
  10. Enjoy!

Very Berry Avocado Toast

I love all avocado toast, but this combo is hands-down my fave! It’s a super simple meal to whip up anytime of the day, and the berries make it sweet and refreshing! 

Ingredients

Serving size: 2 slices of toast 

  • 2 slices of bread. I love the 21 Whole Grains and Seeds bread from Dave’s Killer Bread
  • 1 avocado, mashed
  • ½ c blueberries
  • About 6 strawberries, sliced 
  • ¼ c goat cheese

Directions

  1. Toast your bread.
  2. While your bread is toasting, mash the avocado in a bowl. 
  3. Next, wash your fruit and slice the strawberries.
  4. Once the bread is toasted, mash ½ of the avocado on each slice. 
  5. Place the berries on your toast. 
  6. Sprinkle your desired amount of goat cheese on top.
  7. Enjoy!
